Biokraft Foods Hosts Inaugural Cooking Competition for Cultivated Chicken

Biokraft Foods, a pioneer in the cultivated meat industry, recently held the Great Indian Cultivated Chicken Cook-Off, a cooking competition designed to showcase the culinary potential of their cultivated chicken product. The event took place at the DY Patil School of Hospitality & Tourism Studies in Navi Mumbai and attracted 10 culinary students from various institutions.

The competition aimed to demonstrate that cultivated chicken is real food with real culinary potential, as stated by Biokraft Foods' founder and CEO, Kamalnayan Tibrewal. The series of talks that accompanied the competition provided chefs with the opportunity to learn directly from diverse voices across the food ecosystem.

Issa Patel, a student at the Patkar-Varde College Department of Hospitality and Catering, emerged as the winner with his dish, Masalon ka Safar. His victory earned him a sponsored visit to the Merck Life Science facility in Bangalore. Shlok Khedekar, another student from the same institute, secured second place with his creation, Nawabi Yakitori with Miso-Caramel Sauce. Vedika Sakpal, another participant, won the third prize with her dish, Malai Rose Dumplings.

A special innovation prize was awarded to Shravan Kadam, a student from the Kohinoor College of Hotel and Tourism Management Studies, for his dish, Sanjeevani Jugalbandi.

The dishes were judged based on hygiene and food waste management, taste and texture, innovation and creativity, and presentation. Biokraft Foods believes that chefs, hotels, and restaurants are the best partners to introduce cultivated meat to consumers, and they see the competition winners as potential ambassadors for cultivated meat, planning to involve them in future collaborations.

Anay Mridul, a vegan food writer and editor based in London, was present at the event and reported on the competition for this website. Mridul, who is originally from India, expressed his inspiration at seeing cultivated chicken being prepared in a commercial environment.

Biokraft Foods plans to file for regulatory approval with the Food Safety and Standards Authority (FSSAI) of India this year. Once acceptance of cultivated meat grows, the company plans to look at retail formats.
