In 2019, food blogger Jessica introduced the world to a delightful recipe - Crispy Baked Sweet Potato Bites with Parmesan Herb Butter. This dish, which can be prepared in under 40 minutes with minimal prep, is not only a weeknight side but also an ideal party appetizer.

The recipe requires 2 medium sweet potatoes, peeled and cut into 1-inch cubes for even cooking. Toss these cubes with 2 tbsp of olive oil, ½ tsp salt, and ¼ tsp black pepper. For baking, heat your oven to 400°F.

To ensure extra crispiness, use two baking sheets if needed to prevent overcrowding. Flipping the potatoes halfway through baking, for about 25-30 minutes, ensures even browning on all sides. The potatoes should be baked for 15 minutes, flipped, and then baked for another 10-15 minutes until they are fork-tender and caramelized.

While the potatoes are baking, prepare the Parmesan Herb Butter. Melt 2 tbsp of unsalted butter, then mix in 2 tbsp of grated parmesan cheese, 1 tsp of dried rosemary, 1 tsp of dried thyme, and ½ tsp of garlic powder. Tasting the herb butter before tossing allows you to adjust the seasoning to your preference.

As soon as the potatoes come out of the oven, toss them with the Parmesan Herb Butter. This coats every bite with garlicky, cheesy goodness. Swapping dried herbs for fresh rosemary and thyme can add more flavour, or you can use triple the amount (1 tablespoon each) of fresh herbs.

For an added twist, consider swapping the Parmesan for Pecorino, or adding a spicy kick with red pepper flakes in the butter mix. If your oven runs hot, check the potatoes at 20 minutes to prevent them from burning.

A drizzle of honey at the end of baking can add a sweet flavour to the dish, while adding crispy pancetta bits can add a savoury flavour. The dish has a crispy-on-the-outside, tender-on-the-inside texture that is equally satisfying as its fried alternatives but healthier. Enjoy this delicious and versatile dish!
