The key to creating the perfect pumpkin waffle lies in the ingredients. Salt, not just a seasoning, plays a crucial role in enhancing flavors and balancing the sweetness of the pumpkin.

Egg whites, whipped to medium peaks, are used to create a light, airy texture. For those following a vegan diet, aquafaba (chickpea liquid) can be used as a substitute, whipped to the same consistency.

The dry ingredients, including flour, cornstarch, sugar, baking powder, cinnamon, allspice, and salt, are stirred together in a separate bowl. Ground cinnamon and allspice can be substituted with ground ginger, pumpkin pie spice blend, or mixed spice.

Cornstarch can be replaced with potato starch or tapioca starch for a similar effect. The wet ingredients, such as egg yolk, milk, pumpkin puree, melted butter, oil, and vanilla extract, are combined in a large bowl until smooth.
