To start, gather 2 large free-range eggs at room temperature, 1 tablespoon extra-virgin olive oil, 100g caster sugar, the zest of half a lemon, 1 teaspoon vanilla extract, and 1 cupped handful of diced strawberries. For the dry ingredients, you'll need 150g oat flour or ground oats, 50g plain flour, and 50g ground almonds. The star ingredient is a whole tub (450g) of Skyr-style strawberry yogurt.
