Preservation of Maple Syrup over Extended Periods through Canning Process
Maple syrup, a beloved sweetener, can be stored for extended periods when canned and sealed correctly. Here's a guide to help you preserve this delicious liquid gold.
Firstly, maple syrup can be kept indefinitely when canned properly and sealed hot in sterile jars. The region near 1000 feet above sea level, such as Vermont or Quebec, is ideal for long-term storage in glass containers due to the optimal elevation conditions.
Before canning, the syrup can be filtered through cotton or cloth filters to remove "maple sand" or extra mineral deposits. It should then be heated before canning, ideally straight from the finishing pan, and packed as hot as possible, with as little headspace as possible, ideally around 1/4 inch.
The jars should be sterilized by soaking them in water overnight and then boiling them submerged in water for 10 minutes. Once canned, they do not need to be water bath canned after sealing. Properly sealed glass jars have been known to keep maple syrup fresh for 50+ years.
It's worth noting that plastic jugs are less reliable for storing maple syrup, with a shelf life of only 18-24 months. Plastic containers are porous, and the syrup will begin to darken and change after as little as 3 months in a plastic jug.
Once opened, maple syrup should be stored in the refrigerator for up to a year. Glass jars, when kept in a cool, dark place, can maintain the syrup's freshness indefinitely. However, mold spores can begin growing in an improperly sealed glass jar after about a year, but surface molds can be scraped off.
An interesting fact is that maple sugar can be made by heating maple syrup to a much higher temperature, between 255 and 260, and stirring it until it crystallizes. Maple sugar can be used 1 to 1 in place of brown sugar in any recipe.
In conclusion, with the right methods and storage conditions, maple syrup can be preserved for long periods, ensuring you can enjoy its unique flavour all year round. Whether it's homemade or store-bought, the process for canning is the same. So, go ahead and stock up on this delightful syrup, knowing it will last for years to come.
